Artichokes in light lemon sauce
{a la polita}

'A la polita’ means ‘from Constantinople’; ‘Poli’ is Istanbul in Greek and this dish has a direct reference to the cooking style and flavors that emerged from there. Artichokes are a spring vegetable and my mum would always inaugurate her spring menu buying them fresh from the farmer’s market, either to make them stuffed with rice, raisins and pine nuts and a lemon sauce or to prepare the much loved ‘a la polita’ that you may easily make with frozen artichoke hearts, too.


-       4 artichoke hearts (frozen or fresh)
-       1 scallion, chopped
-       4 small yellow onions, sliced
-       6 small potatoes, peeled and chopped in cubes
-       4 small carrots, sliced
-       1 tbsp. all purpose flour
-       6 tbsp. extra virgin olive oil
-       2 tbsp. chopped dill
-       ½ cup of water
-       juice of 2 lemons
-       a dash of sugar
-       salt & freshly ground black pepper 

 Preparation Method

1.     Heat 2 tbsp. of olive oil in a pot and sauté the onions
2.     Add the carrots, potatoes and finally the artichokes
3.     Pour the water in the pot to cover the ingredients, add some of the lemon juice, salt and pepper
4.     Sprinkle with the flour and mix well
5.     Cover and simmer for about 20 minutes
6.     As soon as the vegetables are softer, add the remaining olive oil, lemon juice and dill

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4
