Sifnos island chickpeas soup

This soup is one of the simplest, but most delicious Greek dishes. In the island of Sifnos, its preparation is a whole ritual that starts late Saturday evening in order to have the soup ready for Sunday lunch after church. The women of the villages use a deep, round, earthenware pot; they prepare the food and put it in the village’s outdoor wood- fired oven, on Saturday evening. It stays there all night – the oven is not on, but stays warm. The secret of this dish is very slow cooking and good quality chickpeas. 

Ingredients

-       1 pound chickpeas
-       1 large onion, grated
-       1/2 cup extra virgin olive oil
-       salt
-       1 tsp. flour (optional)   

Preparation Method

1. The night before: soak the chickpeas in water in a bowl (add 1 tsp. baking soda to help them soften)
2. The next day, rinse the chickpeas with
fresh water

3. Put them in a large pot with the onion, salt and add the olive oil
4. Dust with the flour, if using
5. Add as much water to cover all the ingredients and an additional 1 cup of water to this
6. Mix and cover the pot
7. Simmer for about 1 hour and 15 minutes

Cooking Time: 1hour and 15 minutes
