Lightly fried zucchini with tzatziki dip

A typical Greek meze and a real slice of Greek tavern food! Serve this dish as an appetizer or a side dish with or without the tzatziki dip, close your eyes and daydream. You might end up in a golden sunny beach on some Greek island…

 

Ingredients for tzatziki dip

-       2 cups total Greek yogurt

-       4 cloves garlic, peeled & minced

-       salt

-       2 tbsp. vinegar

-       5 tbsp. extra virgin olive oil

-       1 cucumber, peeled, grated & strained

 

 

Preparation Method for tzatziki dip

1.     Mix all ingredients in a mixing bowl and let tzatziki sit in the fridge for 30 minutes before serving

 

Tip: make sure that you really strain well the cucumber, otherwise your tzatziki dip will be all watery!

 

 

 

Ingredients for zucchini

-       6 zucchini

-       salt & pepper

-       extra virgin olive oil (for frying)

 

Preparation Method for zucchini

1.     Prepare the zucchini; wash them and cut them in slices or rounds, depending on their size; place them on a plate, salt and let them sit for 20 minutes

2.     Before dipping them in the hot oil, wipe them with a paper towel

3.     Heat the olive oil in a frying pan and fry for 2-3 minutes on each side until they are golden brown; let them sit on paper towel before serving
