Milk pie






This is a characteristic example of the Greek shepherds’ cuisine, rooted in the home cooking tradition. A delicious comfort dessert, simple to make with easy to find ingredients, enjoy it warm on cold winter days.


Preparation Method

1.     Preheat the oven to 400F

2.     Boil the milk with the butter, the lemon peel and ½ cup of sugar

3.     As soon as the milk reaches boiling point, add the semolina flour slowly, stirring quickly with a wooden spoon so as not to stick on the bottom of the pan

4.     Remove from fire as soon as the mixture thickens a bit (3-5mins); make sure the mixture does not to get lumpy; remove the lemon peel

5.     Beat the eggs with the remaining sugar and the vanilla beans, and pour them in the milk mixture while it is still warm, whisking quickly

6.     Pour the pie mixture into a butter coated round baking pan

7.     Bake for about one hour until golden brown

8.     Cut in pieces in the pan and sprinkle with the sugar or honey & cinnamon

9.     Serve warm




-       5 cups fresh whole milk

-       1 cup semolina flour

-       1.5 cup cane sugar

-       1 lemon peel

-       vanilla beans from ½ vanilla pod

-       2 eggs

-       1 tbsp. unsalted butter

-       3 tbsp. cane sugar for topping or Greek thyme honey for serving

-       1.2 tsp. cinnamon for topping (optional)
