My grandpa’s fried green peppers

There is no other meze dish that bares more vivid memories of my childhood as this one! My grandfather Sava, would prepare fried green peppers in bulk and store them in his fridge. He always had a little something to offer to his guests along with other meze that he would impromptu whip up with a glass of ouzo.

There is no real recorded recipe for this one; I am just giving you the ingredients and the preparation method that I use like grandpa Sava…

 

Preparation Method

1.     Wash the peppers and leave them on a strainer or dry them with a paper towel (if they are wet, the oil with splash while frying)

2.     Prepare a glass container where you will store the peppers: mix the minced garlic, some vinegar (½ a cup) and ½ a cup of olive oil in the container

3.     Heat some olive oil in a deep frying pan (enough to half cover each pepper) and start frying the peppers until they are golden brown

4.     Place them in the glass container stirring them slightly for the aromas to mix and add some salt; serve immediately or at room temperature if you are storing them in the fridge

Ingredients

-       10 long sweet green peppers

-       extra virgin olive oil for frying

-       ½ cup extra virgin olive oil

-       red wine vinegar

-       5 cloves of garlic, minced
