Oregano and lemon sauce chicken

Preparation Method

1.     Sauté the chicken in the olive oil in a large pan for 5 minutes

2.     Add the garlic cloves for another 2 – 3 minutes

3.     Add the lemon juice, the wine and 1 cup of water

4.     As soon as it reaches boiling point, cover and simmer for 1 hour and 15 minutes until the chicken is tender. Season after the first 30 minutes

5.     Sprinkle with the oregano towards the end

6.     The sauce should reduce by the end of the cooking time

Ingredients

-       1 chicken, cut in 8 pieces

-       2 cloves of garlic, whole

-       1/3 cup extra virgin olive oil

-       the juice of two lemons

-       ½ cup of dry white wine

-       salt & pepper

-       1 tbs. dry oregano

Cooking Time: 1 hour & 15 minutes

Serves: 6
