Macedonian Salad

Greeks do not eat their famous salad all year round! The Greek diet is traditionally seasonal and therefore in the wintertime, tomatoes are replaced by cabbage!

The Macedonian salad is the healthy version of the coleslaw! It is my favorite winter salad as it is very easy to prepare; simply, mix all the ingredients and keep the salad in the fridge for 3 – 4 days; just add olive oil when you are ready to serve.  

Preparation Method

1.     Use a large bowl to mix all the vegetables (cabbage, carrots, celery and garlic)

2.     Season with salt, add the lemon juice and one cup of water; mix and allow them to marinate for 1 hour

3.     Strain the salad and add the chopped sweet red pepper, the vinegar and the olive oil

4.     Mix and serve

Ingredients

-       1 white cabbage, finely chopped

-       ½ red cabbage, finely chopped

-       3 carrots, grated

-       4 celery stalks, (no leaves) finely chopped

-       2 cloves garlic, minced

-       1 – 2 pickled sweet peppers, sliced

-       2 tbsp. vinegar

-       juice of one lemon

-       sea salt

-       extra virgin olive oil

Serves: 6 -8
