Sweet peas, carrots & potatoes one pot dish

This is an old time classic! It is prepared in 5 minutes and it is the perfect alternative for boiled sweet peas. I serve it with rice and yogurt, as a full meal, the way my mother used to make it for us for lunch.  

Preparation Method

1.     Heat half of the olive oil in a large pan and sauté the onion & scallions for 3mins

2.     Add the the potatoes, carrots, sweet peas, tomato paste, sugar, salt & pepper

3.     Stir well to coat vegetables in olive oil

4.     Add the crushed tomatoes (if using) and some water to cover the ingredients

5.     Cover & simmer for about 20mins

6.     Finally, add the dill and the remaining olive oil and allow to boil another 10mins

 

 

Ingredients

-       1 pound sweet peas (frozen are ok, too)

-       2 carrots, peeled & sliced

-       2 potatoes, peeled & cut in bite sized chunks

-       1 yellow onion, chopped

-       4 scallions, chopped

-       1 tsp. tomato paste

-       ½ can crushed tomatoes (optional)

-       1 cup extra virgin olive oil

-       a dash of sugar

-       chopped dill

-       salt & freshly ground black pepper

Cooking Time: 30 minutes
